
Le lenticchie rosse sono tra i legumi più versatili in cucina, non richiedono ammollo e possono essere utilizzate in svariate ricette: zuppe, vellutate, polpette, burger e pesti. L’ Hummus di lenticchie rosse e pomodori secchi è una variante gustosa e colorata del classico hummus di ceci. È perfetto come antipasto, spuntino e contorno, da servire con verdure crude, pane pita e crostini, semplice da preparare è ricco di sapori e colori mediterranei, ideale per rinfrescare le calde serate estive!

Ingredienti per 4 persone
200g di lenticchie rosse, 100g di pomodorini secchi sott’olio, 2 cucchiai di tahina, 1 spicchio d’aglio, succo di 1 lime, 4 cucchiai di olio extravergine d’oliva, sale q.b., pepe q.b., paprika dolce
Sciacquare le lenticchie rosse sotto acqua corrente fredda, cuocerle in una pentola, aggiungendo acqua fino a superare le lenticchie di circa due dita, per 20 minuti fino a quando avranno assorbito tutta l’acqua e lasciar raffreddare. In un frullatore ad immersione inserire le lenticchie, i pomodorini secchi, tenendone qualcuno da parte, la tahina, lo spicchio d’aglio e il succo del lime. Frullare tutti gli ingredienti fino ad ottenere una crema liscia e omogenea, aggiungere l’olio EVO mentre il frullatore è in funzione e continuare fino a raggiungere la consistenza desiderata. Trasferire l’hummus in una ciotola e guarnire con un filo d’olio, la paprika dolce e i pomodori secchi. Accompagnare con crostini di pane e crudités e gustarlo come aperitivo con un bicchiere di vino che bilanci la tendenza dolce delle lenticchie, la spiccata sapidità, l’acidità e la nota speziata dei pomodori secchi!

Ingredients for 4 people
200g red lentils, 100g sun-dried cherry tomatoes in oil, 2 tablespoons tahini, 1 clove of garlic, juice of 1 lime, 4 tablespoons extra virgin olive oil, salt to taste, pepper to taste, sweet paprika
Rinse the red lentils under cold running water, then cook them in a saucepan, adding enough water to cover the lentils by about two fingers, for 20 minutes until they have absorbed all the water, then leave to cool. Place the lentils, the sun-dried tomatoes (setting a few aside), the tahini, the garlic clove and the lime juice into a hand blender. Blend all the ingredients until you have a smooth, even paste, then add the extra virgin olive oil whilst the blender is running and continue until you reach the desired consistency. Transfer the hummus to a bowl and garnish with a drizzle of oil, sweet paprika and the sun-dried tomatoes. Serve with crostini and crudités, and enjoy as an aperitif with a glass of wine to balance the natural sweetness of the lentils, the pronounced savouriness, the acidity and the spicy note of the sun-dried tomatoes!
